Job Summary:
We are looking for a dedicated Demi Chef with proven experience in Malay cuisine and handling central kitchen or banquet-style food preparation. The candidate will assist the Chef de Partie in ensuring smooth operations for large-scale meal preparation, catering events, and daily kitchen production while maintaining quality, taste, and hygiene standards.
Key Responsibilities:
- Prepare, cook, and present authentic Malay dishes (e.g., rendang, masak lemak, gulai, sambal dishes, nasi minyak, traditional kuih) for both daily menus and banquet-style events.
- Assist in large-scale food preparation and bulk cooking, ensuring consistent quality and taste across all servings.
- Work closely with the Chef de Partie to plan and execute banquet menus, buffets, and special events.
- Follow central kitchen production processes, including batch cooking, portion control, and packaging.
- Maintain mise en place and ensure all ingredients are prepped efficiently for large-scale operations.
- Ensure cleanliness, hygiene, and compliance with food safety standards.
- Monitor stock levels of ingredients required for high-volume production and report shortages.
- Support other kitchen sections when necessary, particularly during peak catering events.
Requirements:
- Minimum 2 years of experience as a Demi Chef or Commis Chef, with a strong background in Malay cuisine.
- Hands-on experience in central kitchen or banquet/catering operations (large-scale meal preparation).
- Good knowledge of traditional Malay cooking techniques, ingredients, and flavors.
- Strong time management skills to meet large-scale order deadlines.
- Diploma or Certificate in Culinary Arts is an advantage.
- Ability to work in a fast-paced, high-pressure environment.
- Strong team player with excellent communication skills.
- Flexibility to work shifts, weekends, and public holidays.
